  1. I am making cake balls for Saylor's birthday. Do you freeze them before you dip them? I want to make them earlier then sunday. Or can you freeze them after they are dipped and made?

    1. You can definitely make the cake balls ahead of time and freeze them (undipped)! You will want to thaw them before dipping though (put them in the fridge the night before you need them). Putting the frozen ball in the warm chocolate will cause the chocolate to crack when it hardens due to the expansion of the cake ball as it warms up. You can prevent cracking by getting the cake ball as close to room temperature as possible while still being able to dip and not fall apart. Usually I take the cake balls out of the fridge and let them sit out for a few minutes before I start dipping them. This has worked well. If you aren't sure you have the right temperature you can always try a test cake ball. Dip it and let it harden then see if it cracks. It cracks pretty quick but sometimes can take up to 10 minutes to see. I wouldn't freeze them after they have been dipped because they will most likely crack when they warm up again.

  2. I would say about 60 cake balls depending on how big you make them and how dense you pack them. I use a tablespoon cookie scoop. For the coating, it depends on the brand and how thin you can melt it as well as how you dip them. A very rough estimate is 200-250.
